This recipe was given to me by a friend. I have no idea where he got it, but I can at least give him credit for a delicious hot wing (or leg) recipe. Since we celebrate new years eve with friends and kids, this recipe will definitely do the trick!
For this recipe to work for 2 kg of drumsticks, I needed to multiply it by 2, but you can do the math to calculate it back, can’t you?
Easy as 1-2-3.
For 2 kg of drumsticks or chicken wings you need the following.
4 shallots
6 cloves of garlic
10 tablespoons of honey
1 lime (for the juice)
2 tablespoons of chili powder
1 teaspoon of salt
pepper
1 teaspoon of cinnamon
fresh coriander (to the taste and your likings)
Mix this all well together with the wings (or legs ….) and let it rest in the fridge for at least 6 hours, although longer is better.
I myself did an overnight in the fridge.
I added the coriander separately to the bowl of chicken, by the way, so no harm done.
After 24 hours in the fridge and in the dressing, the chicken wings (or legs) are ready to go for a nice hot grilling session. I’ve taken about 45-60 minutes for them on 180 degrees celsius on the OTP, indirect. Lovely.
Note : Not that hot, so it might need more chili and more lime, for my next session.
