Yess! It’s been way too long since I’ve fired up the DO, so this saturday it was time to dust the Oven off and get it lit up!
Chicken is the preferred cut, and I needed to figure out a nice recipe for cooking it, without sticking in the recipes I know and love already. Got me thinking, and suddenly …. #lightbulboverhead ….. lemon came to mind (and google).
Found a nice oven recipe and made sure that all ingredients were in the house. I needed the following.
- 1 whole chicken, cut up in pieces
- 2 ripe lemons
- 100 ml white wine
- flour and oil
- for the sauce (sofritto),
- 1 white onion, chopped up nicely
- 3 stalks of celery, chopped
- 3 carrots, chopped up.
- 1 long piece of lemon peal
- 3 squeezed loafs of garlic
- rosemary
- 5 bay leafs
I started with cutting up the chicken into nice pieces, and removing the excess fat. I oiled them and salted and peppered them, and smeared them through the flour, for a nice baking experience.
Once done, I fired up the coals and heated up the DO as hot as I could. I poured in the oil and waited until it was nice and hot. Once hot, I placed the peaces of chicken in the hot oil and seared them good. After this I removed them from the DO and placed them on the side.
For the sofritto, just put all the ingredients in the DO and stir until nice and soft. By this time, it smells great in the entire neighborhoud, I can tell you. The smell of baked chicken and simmering onions is usually very good!
Once soft, I added the white wine and let it boil until the really strong smell of the wine is gone. Also I squeezed the juice out of the 2 lemons and even threw in the lemon pieces too for extra flavour. I added about 500 ml water and added the chicken pieces on top.
Just let this simmer for about 1 hour and you’re done.
