Saturday it was the 14th of February, and as you all know, that’s a beautiful day for people in love. Although we never ever join in into this extremely commercial festivity, it is a day to contemplate the love we have for eachother. Since I like BBQ and my wife has to cook every day, my love is expressed using the tools at hand, knowing a kitchen, some knifes, ingredients and a grill outside.

Dress the board Rib-Eye
This weekend we had an ‘official’ diner with friends and family and I wanted to do something special on the table. Thankfully I have my favorite chef Jamie standing by in the kitchen (as a book, not the real deal, of course).
I found the ‘dress the board‘ a very nice addition to the BBQ I already planned. The fun thing is that it’s super easy to do, but very tasteful and entertaining to serve.
Po’ Boy sandwiches!
What exactly is it?

I wanted to have a long go with some outdoor cooking, since I’ve missed a weekend, which is killing, of course, but nevertheless necessary. I really couldn’t make it last weekend.
So, to have a go, I fired up the coal starter and went into the kitchen for some preparation. I had some Butler Steak (about 1,5 kg) and chopped up 2 unions and a complete fresh ball of garlic. Garlic is ALWAYS good! I also made some cajun herbs myself, since I’ve read that factory prepared cajun consists of 60% salt, which I didn’t want.
Burgers!
Why should we do it the hard way, while sometimes a good burger is one of the tastiest things from the Q? That’s the goal for tonight.
We still had some burgers in the fridge from the Black Angus cow, and they are very tasteful. I had a good red onion and some cheddar cheese. That’s enough for a good burger, although you can of course make it as big and high as you like. Tomato would do fine as well, but I’m all out now. Too bad. Lettuce and pickle to top it off.
Pollo agro dulce using the Dutch Oven
We can’t have a weekend without lighting something with charcoal, now can’t we?
Yesterday I decided that we need to do some chicken, but in a way I’ve never done it before. I wanted to try something different, since I ususally do it indirect on the OTP, or using a beer can.
Chicken agro dulce is a very nice stew recipe that give a nice fresh, a little bit sour, flavour. It’s worth it and actually it’s pretty simple to do, if you plan it well.
